1 pizza | 45 minutes

My partner and I went on an extended trip to Puglia in Italy this past autumn. I've been there several times, and it's my favorite region in Italy. The area boasts incredible food and is particularly known as the place where burrata is produced. That's why I created a traditional pizza that celebrates these amazing ingredients.
Ingredients
Pizza Dough (for 4 pizzas)
- 600 g tipo 00 flour
- 20 g salt
- 375 g water
- 1 g dry yeast
Topping (for 1 pizza)
- 50 g mascarpone cream
- A drizzle of olive oil
- 50 g mortadella
- 10 g chopped pistachios
- 1 fresh burrata
Procedure
Pizza Dough
- Pour water into a mixing bowl, add the dry yeast, and let the mixer run for 2 minutes.
- Add half of the flour and the salt, and let the mixer run for 5 minutes before gradually adding the rest of the flour.
- Knead the dough until it has a uniform consistency, approximately 10 minutes.
- Place the dough in a sealed container and let it rise at room temperature for about 2 hours. (I covered my mixing bowl with plastic wrap.)
- Take the dough out of the bowl and divide it into 4 equal portions. Place them in a flat, sealed container and let them rise at room temperature for about 6 hours.
- Be mindful of the rising time, as the dough can over-proof. If it won’t be used after 6 hours, a cold-rise method is recommended.
Baking the Pizza
- Do not use a rolling pin; instead, use your fingers to shape the dough. A rolling pin will remove all the air from the dough.
- Spread the pizza bases with mascarpone and optionally a bit of salt and olive oil.
- Bake the pizza in a preheated oven at 250°C (or as high as your oven can go).
- Remove the pizza from the oven and top with mortadella, chopped pistachios, and burrata.
