
Crêpes
with Lemon Curd and Poppy Seeds

Some of my best childhood memories are of eating pancakes at my grandparents’ house. My sweet grandmother would always make pancakes for us when we stayed with them – and luckily, that happened quite often, so I’ve enjoyed many stacks of warm pancakes in her kitchen. Here is my grandmother’s pancake recipe with a little twist. I’ve borrowed her original recipe and added poppy seeds, which not only give a delightful texture but also look beautiful.
Ingredients
Pancake Batter
- 400 ml milk
- 400 ml flour
- 4 eggs
- 1 tsp salt
- 1 tbsp sugar
- 50 g poppy seeds
Toppings
- Lemon curd
- Fresh berries (optional)
Instructions
- In a large bowl, mix flour, salt, sugar, and poppy seeds.
- Crack the eggs into the mixture and whisk until smooth.
- Gradually add the milk while whisking to avoid lumps.
- Melt butter in a hot pan and cook the pancakes until golden on both sides.
- Serve with lemon curd and fresh berries.
