Ingredients
Celeriac Patties
- ½ celeriac
- 2-3 baking potatoes
- 2 cloves of garlic
- 2 spring onions
- salt and pepper
- 2 dl plain flour
- 2 eggs, whisked
- 3 dl breadcrumbs, ideally panko
- plenty of oil for frying
Dressing
- 2 dl crème fraîche or thick yoghurt
- 1 tsp. Dijon mustard
- 2 tbsp. finely chopped chives
- 1 tbsp. finely chopped dill
- 1 tbsp. finely chopped chervil
- salt and pepper
Sides and garnishes
- mixed salad
- chives, chervil and dill

Procedure
Celeriac Patties
Pare the skin from the celeriac. Coarsely grate the celeriac and potatoes. Finely chop the garlic and spring onion and combine with salt and pepper. Place in a sieve and squeeze as much liquid out of the vegetables as possible.
Shape the vegetable mix in a burger press to make 4 firm patties.
Carefully coat the patties in flour, then whisked egg and finally breadcrumbs. Fry both sides on medium heat for 10-15 minutes until cooked through and golden. Season with salt.
Dressing
Combine crème fraîche/thick yoghurt with Dijon mustard, finely chopped chives, dill and chervil. Season with salt and pepper.
To serve
Plate the patties with a crisp mixed salad, top with dressing and garnish with extra fresh herbs and serve immediately.
